Buying a used rear and buying a set of used gears are two different things.
I know your question is to buy or not to buy used gears but, I make this statement because, I would have no problem buying a used rear but, I would never buy a set of loose used gears.
Gears get a ware pattern (normal use) in them as they go round in the case. The longer they are used the greater this pattern gets. If you remove the gears and then put them back in or, put them in another dif case as you would be doing, they must be placed and reset to the exact same way they came out. If the gears are placed and set but, not to that ware pattern that is already there to begin with, they will wine more so than they did when new causing a harmonic imbalance, Gear wine!!
My 2 cents

Used gears are very risky. Aside from the ware pattern, if they were not installed right the first time, they will never install right. You have less then 10 miles to get the install right. After that the gears are damaged and will never install right.
Don't be cheap on parts. The labor is the killer on the installation of these. I have seen new gear sets not setup right and you still have to pay the labor.
The question I have is why were they removed in the first place? It is cheaper to sell the diff and buy a replacement (swap) .

Half the price but the trouble is doubled.
Buy some earplugs!
From a mechanical point of view there is not much to worrie about, IF the set is mechanically OK.
OK as in: the setup was correct from the beginning, the correct oil was used, break-in procedure was followed.
Setting up those used gears in a different diff housing will take a lot more trial & error (and $$ in labour) because it needs to be exactly right, there are most likely very small differences between diff housings and that is something that works against you.
Ring & pinion are a set, once the gears are used the diff housing they were used in becomes part of it.
