Has anyone bypassed the coolant line in the throttle body. A buddy of mine did it with his vette and said that it was only used for colder climates to warm the incoming air. This makes sense, the colder the air the better performance. Does this work?

Several people have done it. Although it may make a small difference it is not a noticible improvement.. but may create a problem in the winter. Rather than swap it back and forth, most of us have left it alone.

With you being in DE, I would leave it alone. It is there to prevent icing.

After the coolant has helped the throttle body get up to operating temp, the coolant keeps the throttle body from running too hot when under hood temps climb. I read that a few years ago in a Mustang performance article. Makes sense; I guess it's true?

One could always get sneaky and install a little cut off valve. Maybe even with a temp activated solenoid.
