You're supposed to let the engine oil heat up fully, then turn the engine off and let the oil drip down for 3-5 minutes. This is how you will get the most accurate reading. This is the method recommended by Honda. Basically you want all the oil in the pan, but you also want the oil to be hot.
I check mine at each fill up, but wait a few minutes after turning the car off before doing so.

Also make sure to ask the dealership if they used Synthetic oil. You dont want to mix the 2 up. Dont use regular oil if the motor has been run on Synthetic.
