Try combining option 1 and 2 together. Rev and hold the engine to 1.5k-2k RPM, let out the clutch slowly until it grabs (halfway point?), hold for a second, and then continue letting it out. Eventually you'll do it fast enough. Make sure your seat position is good. You shouldn't be in a position where the clutch pedal is springing back too hard.

It probably seems like youre releasing the clutch pedal slowly, but in reality youre not. I know I had that problems when I was learning years ago. It just takes practice and you will be just fine. Luckily the s2000 is extremely easy to drive IMO so you will get the hang of it fast.
And as others have noted, the heavier flywheel of the AP2s make it possible to get the car moving without pressing the gas at all. I do it all the time.

honestly dam the clutch, its all part of the growing pains of learning to drive a manual just blip the throttle and release the clutch. slowly work on your throttle control gradually til you dont need to blip the throttle anymore when you get the feel of the clutch. my tip would be to lean your head all the back against the headrest, you will get a better feel of when the clutch starts to engage.
