Barb just made a focaccia.
The one she made in her class had a better texture of crust.
That may well be attributable to the oven since we don't have the whiz bang commercial oven.
I don't anticipate that to be changing in the near future either.

I don't like to cook so you rarely see me post here. I've had a hankering for refried beans and finally bought some at Costco. I made myself a bean and cheese burrito last night with avocado. Easy and quick. So yummy! I think it's going to be tonight's dinner, too.
^4-26-2024. I fried the flour tortilla in avocado oil with salt. So much tastier that way.
^4-26-2024. Heated up some organic refried beans.
^4-26-2024. Tortilla, refried beans, some shredded cheddar from Trader Joe's, some sour cream and half an avocado.
^4-26-2024. Medium hot sauce to top it.

I had to suffer with sourdough pancakes this morning.

Not that healthy, not low in calories, but tonight we had Rick's version of Zuppa Toscana soup. He found two recipes on line and worked with both. Used light cream instead of heavy cream. Lots of spinach, some Italian sausage, a little pasta (I might have preferred potatoes), other spices, broth, etc. It was delicious! He made a large pot of it. The rest will be frozen and ready for another day.

Had to look that one up. Seems it's popular at Olive Garden. It is a creamy soup made withItalian sausage, bacon, tender potatoes, garlic, and kale. Never had it.

I ordered Ina's coconut cake from Ina Garten's Barefoot Contessa for Mother's Day but my wife didn't like it too much. She said it was too sweet and rich. I also sent one to my sister and she said the same thing. She preferred White Chocolate Coconut Bundt Cake aka Tom Cruise Cake from Doan's which I sent last year. She said Doan's cake is more polished and not easy to duplicate. I guess I will not be ordering Ina's coconut cake going forward and have to eat the remaining Ina's coconut cake.
