Been thinking about my mother the past few days, so am going to make a dessert she used to make a lot. Don't know where it came from but it's called Ozark Pudding. Here's the recipe. It's very easy and very yummy.

1 egg well beaten
3/4 cup sugar
1/3 cup flour
1 1/4 tsp baking powder
1 tsp vanilla
Pinch salt

Mix egg and sugar. Add the rest and stir. Fold in 1/2 cup chopped nuts (pecans are good) and 1/2 cup chopped apple (Granny Smith is good).
Pour into baking dish and bake for 30 min at 350. Enjoy!!

I usually don't buy many 'brand' named but prefer to buy from local beef shops that do their own. I got hooked on Amish beef jerky that a local store use to sell back in Pennsylvania. Original style German ring balogna was another local item I crave.

Gonna make the Ozark Pudding (recipe above) again...it was really good. Tastes a bit like pecan pie, only much lighter.

Bison chili in the crockpot again. Serving with cornbread. I put a small can of creamed corn in it. Really makes it delish.

Made a new dish tonight - cacio e pepe. It's so simple and really, really good. Milk with pecorino romano cheese to make a sauce which is then tossed in spaghetti with lots of pepper and some olive oil. Sprinkle a little basil on top.

^ Speaking of Italian, a friend's wife had rotary cuff surgery a couple of weeks ago, and the +1 and I volunteered to take over our famous lasagna. This Sun is the time. Haven't made it in awhile since it's a lot for two people. But we will be six for dinner. We make his mother's sauce (which has meatballs and sausage), then put it all together. Should be delish!

Had our niece and her 3 house mates over for dinner last night. I made soft shell chicken tacos with home made salsa and a side of Spanish rice. It was a big hit! My wife and I love the fact that 4 early twenties ladies enjoy spending time with us old folks.
