after i wash the car and dry it, my last drying steps are to take a rag and dry inside the doors, trunk, tires, and under the hood...
with that rag, i then wipe out the engine bay (in other words, i use a damp rag that is already a little dirty). i dont do anything special other than that unless i see something that needs extra attention. then i might use some body shampoo.
on my daughter's older car, when she got it we detailed the engine using a degreaser and some other engine cleaning products- but this is only necessary if the engine has been neglected. this stuff has to be rinsed of with pressure, so certain areas have to be masked off (in her case a distributor).

Before...
After...
Steps between...
1) Let engine cool
2) Shoot the engine with water just enough to get the major crud off. You don't want to use extremely high pressure as it may get into places that are normally water resistant, and it may damage seals or electrical connections. Generally, you can spray pretty much everything on an S2000 though.
3) Use Gunk engine degreased or a similar product. The recommended products seem to vary, but just follow the directions that come with the product and you should be okay.
4) Rinse off the product.
5) Before the rinse water dries, get as much of it off as you can with high pressure air. This will eliminate hardwater spots all over your engine.
6) Dress up the engine with the appropriate products, like chrome polish on the strut tower bar, silicone conditioner on the hoses, etc.

also try doing a search as I've also read where it's a good idea to cover the important areas like cables, electrical units ? with foil paper as not to get water and other chemical residue inside..

I did what dj qube did to his S2000 engine bay to my Civic Si B16A engine bay about 5 times and everything runs fine. The tech told me that pretty much everything is protected with rubber grommets and seals already so spraying hose water into the bay would be OK. After the initial rinse, I went to town with Simple Green, did some rubbing with a rag and sprayed it down with hose water. Though make sure you rinse the degreaser off your quarterpanels quickly since it isn't the best thing in the world for it to dry on your paint.
