Sounds like a well deserved road trip. Your intended route is the northern fast track from east to west. Dallas, Fort Worth, Wichita Falls and Amarillo are all well north of the folks down here in Central Texas. You might try posting in the North Texas forum (Dallas-Fort Worth).
I used to live in Dallas-Fort Worth and I've made the trip west through Albuquerque. Unfortunately I can't say it will be all that scenic. The desert southwest has long uninterrupted stretches where the road never seems to turn. Some of the mountain passes have nice views. Your PCH trip should be nice. Keep a watchful eye on the weather. The S2000 and a winter storm out west would be a bad combination.
If you venture further south in Texas some of our best roads are in the Hill Country WSW from Austin.

Yeah, I am from the DFW area and I have made the drive DFW-LA via Ft Worth to Amarillo to 40W. All I can suggest is if you want you can stop off at the Grand Canyon on your way. It is about an hour North of the 40 on hwy 64. That is about it. The Northern part of Texas/NM/AZ is lots and lots of flat. That drive is not going to be very fun so stock up on coffee and red bull! I'm military, and was stationed at Keesler AFB in Biloxi MS. I'm not stationed at Lackland AFB in San Antonio, and took 10W straight through. It's really not all that exciting.
