You used to be able to buy extra knobs from Koni for a few dollars. I've only had experience with Koni's on Miatas though, so I can't answer your question about adjusting.

Question answered:
Counter clockwise provides a firmer shock and ride; clockwise provides for a softer shock and softer ride.
There are no click stops or sounds.
