Andy - Welcome

I have a MY00 with the plastic screen - it is not a problem! and is a lot bigger than the glass one! Of course only an issue with the hood up! which is anyway!

As for the other mods from 02 onwards IIRC if U put the HUK optimum geometry settings on a pre 02 (as I have) the handling is as good if not better than a stock post 02. The speaker upgrade was a pile of so not worth worrying about as U will want to change them anyway. Other than that the rest is minor cosmetics! Silver bits in lights, different knob etc!

Get yourself to a meet and have a good look round and talk to a few of us! (there are a couple U might want to avoid they know who they are!) That way U can see which you prefer!

I'm biased but go for an 02 of later if you can, IMHO it's worth it just for the glass rear screen, leather console cover and different wheels (I prefer them but this is a matter of opinion). Some dyno tests in the US forum show that they tend to dyno better than the previous years as well (the post-02 ECU has a different part number which is a big clue).

I pretty much, 100% never drive with the top up - so the rear is irrelevant.

The glass is better vision but remember, the glass adds more weight! Remember, heavy = slower.

I've owned an MY99 (RIP ) and an MY02.

Apart from a few cosmetic differences that you'll read about, I preferred the glass screen as I did have trouble stopping the plastic one going 'milky'.

You'll probably find a lot about how the two versions drive differently.... yes they do, but day on day it's not really THAT different (how often are you likely to get out of one and into the other to tell?) IMHO. Might be an idea to try both if cost is not a deciding issue.
