Paul, if you get really stuck, I have some two stage Swissol leather clean and feed.
It's good stuff and will give the leather a soft sheen and make it feel all supple - rather than that second hand car dealer shiny shiny look.

I'm with 303 or raggtopp cleaner, then 303 protectant, if it's exterme then a JML magic eraser (homebase/wilkinsons etc.) will remove any crud or old product, you will have a really matt surface to work from, but be careful as it is a ultra fine abrasive, great for the steering wheel in particular, as per a previous thread.

Try removing the original product first, something like Meths diluted 1:1 with water. The only part in the car which is leather is the front of the seats including bolsters, this makes cleaning all other surface a doodle, Meths and Isopropyl and my weapons of choice for cleaning off the main gunk.
Once you have the dash cleaned there are a number of excellent products out there, my preferred one for restoration and protection is Gtechniq C2 which is an excellent all rounder which will not shine any non shiny surface.
