Why not look into buying a Locost 7 replica, if your resourceful enough to source the parts, should keep you occupied for a few weeks and the results would be worth it.

MK2 Golf Gti (either 8 or 16v). It'd be that or the pug although the Golf is a lot better built & reliable so easier to find a good one. Bits are cheap too although avoid kev/chav'd up ones.
I had a 16v and it's top fun. light and chuckable and good performance (60 in 8 secs).

Depends how much practicality you're after.
Classics are fine if you're a spanner man, because anything made before circa 1985 is a POS, and if it's British, a FPOS.
I would suggest a CRX or Civic VTi as being practical fun.
People tend to want big money for the few good VW GTis etc that are remaining. Corrados have recently been similarly discounted (or not discounted, in fact).
An MX-5 is a no-brainer, but it is really too close to the S2000 to be worth having. It'll just seem a bit crap.
I'd shy away from anything French or Italian (well, except for the obvious, but I believe you've been very fortunate with reliability!)
