I don't think either would be enough to negatively impact performance but the 35 might give you alittle more space if you need it. Also I am not sure which size has more tire options available.
Unfortunately there is no manufacture that makes a 275/35 in a 17" wheel. A better option to get a closer to OEM sidewall/gear would to run my 295/35/17 Kuhmo SX. They, as well as a couple R comp Hoosers are the only tires that come in this rather unique size though. Fortunately the SX are a good tire in the extreme summer category for street/track use.

To the OP, I'm more concerned about your front fitment, that tire profile on a 9" wheel is going to be pretty square so its not going to allow for much steering input if your lowered, your going to have to run quite a bit of negative camber and flare your fenders to clear the outside, and you could have inside rubbing issues as a result, I do with my 8.5 +40 with 245 with 2" drop at -2.4. The 275 on the 10" wheel will actually be slightly stretched, however if you went with my 295 they wont be. I dont know how wide your over fenders are, I hope they are at least 25mm of usable width and 40mm would be best, if not you may have complications with the +18 offset still. Always better to air on the side of too much spacing, then you can fine tune it with wheel spacers and get the track width the way you want it and have no fitment issues. If you do things right and take notice of the details, you can fit 11.5" wheels on the rear with 295's and no over fenders at all, just stock rolled/cut and tab relocated.

But hell if I was going to resort to ugly riveted on over fenders, I wouldn't settle for anything narrower then the next size up in 17's which is the 315/35 - these happen to be the exact sidewall height of the 275/40 mind you...

275's are the max recommended tire size for a 10" rim. 295's would probably balloon a bit. I'm running 275/40/18 nt01s and its pretty square on the wheel. I had 265's before and they were a little stretched but they still worked very well. Here's a good tire calculator you can use.

Actually the rim width range for a 275 tire is 9.5-11 inches, and the ideal size is 10 inches says tire rack.
