Will 265/35/18 rub on a 18/9 wheel with a 63 offset?

I think that would fit. People run 255s on the OEM AP2 wheels all the time, and your wheels are only 2mm less in offset. When I plug this into my offset calculator, it predicts that the edge of the tread of your tire will be about 3mm further from the fender than the popular 40 offset with a 225 tire. So I guess it would fit.

Also add that the wheel might be plus 60

What if I was to dump /slam my car

Yes. Don't dump/slam your car. It may look cool to you but it will drive like crap riding around on the bump stops. And yes it'll rub if it's low enough!
