A 205 to 245 stagger will be perfectly fine. In fact that's the stagger that Honda uses if you look closely. On the AP1 the rears measure out at a 245 width despite the 225 labeling. On the AP2 the fronts run narrow like a 205 even though they are labeled as a 215.
Ubetit says he had some rubbing issues and +42 is indeed aggressive. But like he said, some will tell you it fits. Not every S2000 with rub the same way. You could try some Toyo T1 tires; people say they run a little bit narrow. Or, you could add a smidge of negative camber up front if you rub.
If you plan to lower the car 2" or something, then you might try to find some wheels with higher offsets.

it seems as though the only tire set i can get from tirerack with
front: 205/40/18
rear: 245/35/18
is michelin pilot sport ps2.

i live in australia and the michelin website does not list these tires here

is it possible to use different brands of tires for front and back wheels? or, same brand tires but with different treads? what are the disadvantages in doing this?

Been reading and researching and researching some more, but I am going to bite the bullet on some rims and the specs are as follows:
Front:
18x7.5" with a +48 offset
Rear:
18x9" with a +48 offset
as per the chart, I should run a 215/40 and a 245/35. I would have 3mm more clearance than the charts says for the rear and be perfect up front. However that really limits my tire choices. If I wanted to run a 255 width in the rear, I could get the Pzero Nero M+S that I really like. Is that too much stagger though? I would think 215 and 255 to be too much of a difference. I know stock is 205 and 245 so its basically the same thing, but I just want to clarify that. If it is too much, how about 225 and 255, I know I would be a whole 7mm over in the front, so would I just be able to add camber that would balance that out, or would I have to get the fenders rolled to balance it out? I know there is alot to take in, but I am always picky and want to make sure its going to run good before I do anything. (I had a MINI that was easier to work with, it had a 4x100 bolt pattern and a +35 to +45 offset threshold).

The 215f and 255r will be perfect IMO; I would do that. I don't think going to 225 front would be worth it. The S2000 doesn't lack for turn-in ability and is already loose enough. Still if you do decide to run the 225 in front you could do what you said and experiment with fender rolling and/or additional negative camber. However if you go with wider tires in front and more camber, the front end might have more bite than you want...

I have chosen the following setup for my s2k, but
I was wandering if I would have clearance problems
if I had 6 pot or 4 pot calipers on.

I have really wanted to get some 19" wheels on the S but can't find anything that will fit and not super expensive.
I found a set, heres the specs:
Front 19x8.5 45mm offset
Back 19x9.5 55mm offset
My car is slammed so my question is, how much are they going to rub? Will it be drivable at all or will I damage too many things if I put these wheels on?
