Though I hear good things about evasive, the only setup I drove they did was horrrrrrible and another member who has a proven driving history agreed. Though I know other legitimate drivers who like their stuff just fine.
Darren @ west end is my recommendation.
As for ride height, really depends on what you're trying to do, generally most rice rocket dummies go way to low as far as handling goes.
In Japan tracks are very smooth perhaps that's where this started but in Europe and a bit of the USA tracks are quite bumpy and low cars just simply don't function properly, aside from scraping all over. I'd say you're quite a bit too low from what you're describing about one skinny finger.
Doing a corner-balance is ridiculous for a daily driven street car. I wouldn't even consider that unless it's a track oriented car that you really care about lap times with. Honestly, if your time is .05 sec slower will you even know the difference? Nope. A proper alignment is all well and good but you can probably do it yourself or partially yourself by having most anyone set your toe in the front properly and the toe in the rear to about 0, follow euro spec essentially (including caster) Then just max out camber front and rear which is the best track setting possible. That's your best handling without changing suspension components.

Hey Greg,
I work pretty close to West End, do you know how much for an alignment and how long it usually take for an alignment there?
Couple of Hours? Coz I want to go there on my lunch time and get it aligned. I know they are popular and need an appointment a few weeks ahead. I just want a rough estimate.
