Beef short ribs, by far my favourite ribs, delish. Lately we have been buying them cut really thin, maybe 1/2 inch thick compared to your typical short rib with a big bone. I love both kinds, but the thinner ones are faster to cook, I like braising the big ribs over a few hours.
