Thanks for all the kind words guys - I am going to go to the shop now and talk to the guy that works there about it, and he is going to write up an assessment. I pmed a few people from the site who had similar incidents, and some said they got new seats for like 6000 or something like that. If that is the case, I will probably go with some aftermarkets, get a top with a glass rear window, etc. It still sucks, definitely, but if I have to go without my car for probly about a month, I might as well get something out of it 
BTW, I am DEFINITELY interested in some seat locks. My car is going to be locked down after this - not trying to have another incident. I am considering a hard top for sure, we will see, but I don't have 3k to spend for one right now either

A person can't buy new seats from Honda even if they wanted to. Honda doesn't sell them as whole units- they sell all the pieces to make the seat. If this route is chosen(and I'd have a hard time believing that an insurance company would pay for new seats on an '00 regardless of mileage), not only is there the cost of the parts, but also assembly.
What Allstate did in my case was locate a set of very good condition used seats from a salvage yard. They also gave me an allowance for the custom upholstery I had done to them. My car is an '02 and the theft took place in December '04. I believe the "seat" portion of my check was for $2200-$2400.
I didn't like accepting seats that I hadn't seen, so I ended up buying tan ones from dave22. I had to buy the door panels from a guy in New Orleans. This left me with some money to put towards the color change.
As a side note, since the seats were stolen from the car while it was at the body shop, my insurance company went after and won against the shop's insurance. Even with another company being held responsible for payment, my insurance did not pay for brand new seats, hence my take on you getting a check that would include the total price of brand new seats. Sorry.

If you do decide that tan may be something you'd be interested in, I'd cut you a deal because of how you are without seats. I've been there and it SUCKS!
