Open carry is for those that want to draw attention to themselves. I am not a fan.
P7's are slim, I wouldn't mind one of them for CCW.
As far as holsters go, I'm partial to Kramer IWB's. I'm a 1911 and Hi-power kinda guy. The #3 makes a Commander sized 1911 very comfortable all day.

This guy makes very nice stuff, I've got one of his Reinforced snap mount OWB for my tupperware gun. http://www.taurisholsters.com/index.cfm
Milt Sparks is also very nice, but be prepared to wait.

Im in TX so y'all probably know how it is here. I've got my license, but don't carry my XD9.
Ming, if you're still looking for a carry piece, the best advice that I can give is to go to a gun store that has a range and a good rental section. Try as many as you can, stay in calibers 9mm Para and greater, and pick the one that you shoot best with.
A proper CCW setup consists of a holster, spare magazine pouch, and a gun belt. Most people skip the last one, and it's just as important as the other two.
My current CCW setup is a Raven Concealment System's Phantom (found at http://www.themalabarfront.com) and spare mag carrier, and I've had great success with the Frequent Flyer gunbelt from The Wilderness (http://store.thewilderness.com/index.php). This setup allows me to effectively conceal even in my typical off-duty summer attire of t-shirt and shorts.
Oh yeah - my carry gun is a Glock 19.
ETA: If you haven't done so already, get yourself into a basic handgun course. Here's a good example of what to look for from Vickers Tactical:

For the record it is possible to get a CCW in the Dumb O'Cratic Republik of Kalifornia even if your name is not Feinstein , Boxer or Nazi-Pelosi.
Just have to know which county and sheriff to use, wink wink.
Fobus holsters for off the shelf. I have mine made for me. Bespoke is always better.
For the Cali haters from AZ. Guys I dove, hog, sheep hunt in your state every year. But when the hotel desk clerks look at my ID and then ask why in hell I would leave my city to visit hell in their city it speaks volumes.

If you need to carry a concealed weapon then you seriously need a better job so you can afford to move away from the ghetto.
