With any link, if you view the source of the email message, they can steal your cookie.
For example, something that looks like www.ebay.com will actually link to ebay but run a javascript to redirect back to their site after going to ebay. For the brief second you're at ebay, they can access your computer side cookie.
This is how they steal your account.
