Mushrooms and olives are allowed in my book...and breaded chicken pizza is the best out there. I agree with you that 3 toppings is max, and I also think that no topping on pizza should really be considered "healthy." (as olives and mushrooms have no real nutritional value)
If you haven't had good "local" pizza I don't expect anyone to get why "expensive" places are worth it. The chains are all pretty much crap... mostly bland even compared to frozen brands.
IMO, I don't get thin crust. I honestly don't get "pan" pizze either. Crispy crust or super thick crust just take away from the toppings.
