Yeah, been racing on one bar, no problem. The pump is not hanging low, sucking the tank bottom?
Had a customer car with bad EVAP and the tank bottom went up a few mm when the fuel level were low (vacuum).
The pump touched the bottom and died over and over again.

Try driving without gas cap or hang the pump a tiny bit higher.
