with the AEM under boost control->advanced boost->boost target methods->HI/LO Boost Switch->HI and LO Boost Switch you can add a switch and set two different boost levels within the AEM. I'm going to set mine up so I'll have one setting that's low boost, probably whatever boost is around 400whp, then high boost will be 500whp 
I think you can only switch between two settings, I don't think you can set up a potentiometer and have it be fully variable between those two settings, that would be cool.

there's that 4th plug on the AEM that you don't use to plug into the factory harness, I would use one if the extras on that plug. there's extras on each of the factory plugs too but that's more work. once the switch is in place you can tell the AEM what input to look for and what you want it to do when the switch is flipped. to test the boost you can just look at the "boost target" and flip the switch between modes. that way you can see the boost level and make sure the switch is working before road testing.
you mentioned wanting a low boost / street gas tune and high boost / race gas tune. just to eliminate the possibility of running high boost on your street gas tune you could have that one switch go between race gas / high boost mode and your pump gas / low boost mode. set up the nitrous map as your high boost fuel / timing map and tell it to look for the same input as the high boost switch. you can test to make sure the switch is switching to that fuel / timing map by seeing if it says the nitrous is on when you flip the switch.
