If the tuner is smart, he will tune you at a 90- 110 degree weather map when its even 50 degrees allowing for adjustment in weather, heat soaking and other variables that change. But if your going for peak power 100% of the time you will need alternate tunes for different enviroments. Most tuners tune on the safe side and not for peak power.

Another thing that effects AFRs and the overall tune is the gas. As the weather changes so do the fuel companys fuels. (10% ethonal) That can effect up to a half a point in AFRs. Just another thing to consider.

True. I know someone who blew their motor due to bad gas. Whenever you fill up at full service stations, make SURE they are putting in 93, and not accidentally grabbing the 87 handle.
