If you run out of gas can you just pump a little 93 to get you to the e85 station?

You can pump either 93 or E85 indiscriminately; my car was running well on E51 (when I first dumped E85 into my tank which still had a few gallons of 93).

Correct. The blending between maps (as dictated the individual) is a function of ethanol content.

Looks like it's time to sell my v1 and buy the v2 I have to have this flex fuel setup seems like best way to go
