Just installed a black Nappa leather with Millenium yellow thread shift boot on the 05 RYP. The shift boot at the base had a bit of extra material that needed to be cut away, but otherwise it fit correctly, including all the holes. It took a lot of effort to massage the leather to hold its shape so the shift boot surrond could be clipped on, but that's the nature of the leather. The only criticism is that the folded-over top part of the shift boot is shorter in the new boot than the OEM -- this doesn't make a big difference in practice, but the extra material would secure the boot from moving up and down.

I have two leather steering wheel covers from Redline am very happy with the fit and finish of them. I purchased them at least five years ago - if not longer - and the leather has held up extremely well over the years. While the leather is very high quality, I was originally concerned it wouldn't last, but it certainly has. And while I don't have an S2K yet, I am considering buying an extra leather steering wheel from Redline (or sending them one) for a thicker steering wheel, and will have the original one as a backup since I also want to keep it as stock as possible, which will also preserve the original.
They do offer to install the leather cover for I believe a $150 fee (so $300 for the leather and install + shipping), which is much more affordable than most other options on the market.
