AC still comes on when you switch to defog mode, but now you can turn it off if you want.
If you reset your ECU, it forgets this and you have to do it again.

I think that where I live the defrost works better without the AC than with the AC. The windows are fogging because the glass is cold, not because the humidity in the air is especially high.

just a little bit of info about the foging of the windshield. moisture in teh air cuases it to fog, hence humidty is moisture in the air. air conditioning removes moisture in the air, its a dehumidifier.

The advice everyone is telling you, which you are blatantly ignoring is, that you are completely destroying the value of your car, now and in the future, for a weight savings of no more than 20 pounds. Your entire evaporator and heater core is plastic and aluminum and weighs very little and they are one piece; you can't just remove the evap, you have to remove it all and that means no AC and no heat. If you do that your car is now worthless because it can't be sold without a heater as a registered street car.
