I have not had much time to work on it over the past week. I'm hoping to get out there with a timing light this week to verify spark is occurring when it should. If that's in line, it pretty much leaves something with the fuel.

Any updates? Curious to see if you were able to fix the issue...

Good luck either way!
I finally had some time to work on the car. I was able to get a timing light on cylinder #1 while trying to start it and discovered that the timing looks dead on when first cranking over. As soon as it starts to sputter, it seems like the ECU retards the timing (hard to say how much, but it seems like 5 degrees or more). I disconnected the crank position sensor to see what effect that would have on timing and the car would run on what sounds like 2 cylinders (as it did before) but timing was way off (estimate 50 or 60 degrees plus).
Got it running! I crossed the intake cam position sensor wires when fixing the wiring. Car runs like a top now, just need to bleed the brakes and get some break in miles on the engine.
