With the heat and humidity of Louisiana, there are some days you have to!! But it depends whether I'm driving in the city, with a lot of stop & go, and out doing some back road driving.
I see no reason not to. Cold air "falls", so potentially using A/C should keep you cozy. Wearing white can help, too!
I don't like using A/C on a stick shift car "in town". The timing of the shifts is so much different with the compressor running than when it isn't, that I find it annoying and prefer to leave it off. (You never know whether the compressor is running or not, because it cycles on and off while operating.)
Having the heat on when the top is down is NOT the same as having the air-conditioner on with the top down. You get the heat for free, but the AC actually takes a little bit of power.
If it's hot enough, I turn on the air conditioner with the top down, but side windows up. I don't consider that any more wasteful than having the AC on with the top up, since the air conditioner has to do exactly the same amount of work. On the day the accompanying photo was taken, the temperature hit 112 degrees in the Southern California desert. I was determined not to put my top up except for heavy rain, but without the AC, I probably would have died from heat exhaustion. With the AC it was reasonably comfortable.
