Here is the best explination I can give.
Well, launching is going to depend on how much grip you have on your tires. Our tires wear fast so over time you will have to lower the rpm you launch at.
Here's the jist of it.....
1. rev and hold revs at about 6000-6500rpm.
2. drop the clutch and floor it
3. keep the pedal floored, til your tires hook up
4. redline. shift. redline. shift.... etc.
To start, this is what you do. When you have newer tires (since you have a newer car), you would hold in the clutch, and give enough gas to rev to about 6500rpm. Hold the rpm at 6500 or so and the rest is simple. When you go, drop the clutch.... as FAST as you can. (if you don't the clutch will slip, and that's bad!) You drop the clutch and just floor it. Your tires will spin (the back end may swing out a bit, usually to the right.... just correct slightly with the steering wheel, but DO NOT let off the gas).
If you do this correctly, when your tires hook up (stop spinning) your rpm should be around the vtec point (6000rpm). Perfect launch.
If you spin too much... (ie, your tires aren't hooking up within about 2 seconds), lower the rpm you drop at. If you bog... (ie, your tires spin, but then hook up and you are below 5000rpm) drop a bit higher.
Once your tires hook up, rev to redline and shift. You know the rest.
One last thing. You have to drop the clutch fast. If you slip the clutch (your rpms will be really high.... but your tires aren't spinning) PUSH THE CLUTCH BACK IN. You don't want to glaze your clutch over by continuing to let it slip. You can tell when your tires are spinning, because you'll hear it, and you'll feel the back end slide out a bit.
Sorry this got long... I'm just trying to be thorough.

I can't ever slide my foot off fast enough so here is what I do. (Burned clutch is bad)
Put just the tip of my left shoe on the lower right hand corner rubber plug on the clutch pedal.
Rev to 7K or so.
Push my clutch foot in a little bit so my shoe slips off the clutch pedal and it snaps up on its on spring recoil. (try it a few times when you are parked so you get the idea, you can hear the pedal "thump" when it snaps back)
Keep in the gas and let err rip.
