You will likely see this drop with a more aggressive alignment and sticker tires. Since I've changed both I barely see 300 to a tank, or better then 26mpg. When I first got the car I got 30+ on the freeway.
Just did 10 hours in the car, with a few pit stops along the way. Not your regular 'freeway' as there were some stretches of very spirited twisties on 1.5 lane roads.
My back didn't bother me at all.

It's not like you need all that performance from sticky tires anyway on the street. You never push the very limits of grip, and if you do, you're dumb because one mistake and it's off the side of the cliff. Take it to the track.

my only complaint on long drives is obviously the NVH.... and you cant get a deep enough recline for a comfortable nap
the driving position and comfort though is totally there
Comfort's a subjective matter. Just did well over 3,000 miles going from Texas->Arkansas->Tennessee->North Carolina->Kentucky and back with one 17 hour day. No complaints about comfort but YMMV.

I also don't know where you live, here we have twisty mountain roads and the change in both my alignment and tires is a night and day improvement in handling.
I don't drive the car to work every day so the net gains of a race wheel/tire setup is limited.
Run the numbers
10,000 miles @ 30mpg @ $3/gal = $1000 in gas
10,000 miles @ 25mpg @ $3/gal = $1200 in gas
So to go to all that effort to save $200/year... well my time is more valuable then that.
Do what you like, when you want to have more fun you'll get better tires.
I'm considering road tripping from Wilmington, Delaware to Viroqua, Wisconsin to visit relatives. About a 2200 mile round trip. I'm also considering taking the scenic route home through the upper peninsula of Michigan, which would tack on a couple hundred extra miles. I'm somewhat nervous about how my car will fare but definitely excited about the prospect of a road trip in a convertible.
