My S2000 almost drowned
Take interior out. Then take carpet out. Dry both. Then dry the floor pan. In those hard to reach areas, take WD40 with the red straw nozzle and spray into those nooks and crannys. Spray liberally.
Wipe off what you can get to. Let everything sit for a few hours in the sun and dry heat.
Re-install, you should be golden.

Take out seat, 4 bolts per, and don't forget the connector on the bottom of the driver's seat.
Remove rear plastic pieces overlapping the carpet.
Remove clips holding down carpet on center console.
Remove dead pedal and bolt behind accelerator.
Remove molding on kick-panel. (One with the silver piece saying S-2000.)
Remove plastic molding on kick-panel under dash.
Remove seat belt receiver on floor.
Carpet should come right out.
It's not hard, I swapped my interior with another guy's (2 removals, 2 installs) in less than a day in my garage.
Also, the center console carpet on the 01 is a bitch to get out but it doesn't sound like the water got high enough to need to remove that.
P.S. If I missed something, I appologize, it's been a year since I swapped the interior.
