The S2000 Is Not A Collector Car
You are looking in a different market that is new to you. Its a whole different would of cars out there, and so far you are only becoming aquainted with how the S fits into that new world. I bet you will encounter more noteworthy car culture differences out there as time goes on.
Also, the S is a special car. Most of the time, even when it is finally time to move on and sell it, people are torn about letting it go. So unless they really need to sell it they are going to be slow about it. Its not going to be the typical commodity car buying process.
Lastly, define 'collector car'. To many of us it conjures the idea of a car that is both special, and old. How old does it have to be to meet the criteria? Does it even have to be old? Isn't the intrinsic quality of oldness here really just availability? New ones don't exist anymore and there is a finite number of them left. Doesn't that fit the S?

Most collector car insurances require that the vehicle is worth a certain value (usually over $15,000), the car must be garaged, and the limit your coverage to 4,000-5,000 miles a year. There may be some other things. Hagerty has most of it on their site.
If not a collectors car now, I believe it will follow in the NSX's footsteps. (my old blue 03 nsx is in the cars for sale now)
