S2k rear spin out

you doubt its your driving, and thats your problem. the car doesnt do anything by itself, it only does what you make it do. you spun out because you accelerated more than what your tires were capable of gripping. then you probably let off the throttle abruptly (or stepped on your brakes) which just completed your 360.
there's nothing wrong with your differential. you might think you didn't accelerate enough to spin out, but your COLD tires definately didnt agree

on the street, I have to seriously jab the throttle to get the back end to do anything out of the ordinary.

I doubt it's my driving. I know not to to pick up too fast when the ground is wet. So most likely it's the oil slick on the ground that I must have missed. It's not windy but just a bit of wet pavement near a construction area.
I've driven through real (not imaginary oil slicks) and not spun out.
If you don't realize it's something you did you'll wreck your car the next time.
You should be able to correct if the rear is coming out at only 10-15 mph. Seems like you would have to turn the wheel away from the skid and give it throttle input to do a 360 at that speed. As long as no one got hurt and nothing happened.

Also I had driven about 20 miles on the highway before I spun out so NO my tires were not COLD and at 55F it's not cold enough to have anything frozen on the ground.

You made a mistake when you were driving. We've all done it. Thankfully you walked away. Learn from your error and correct it. Dont just posture like you are a great driver. To be great at anything you have to always be willing to learn.
