I tried to search for it but I couldn't come up with anything. I'm thinking about buying a 00 S2000 and was wondering what key differences were between the years.

There were some significant changes starting with the '02 model. And, of course, the '04 model had even more significant changes.
If you have service records and oil change information, that's pretty important. You should be able to take the car for a nice drive and get an idea of what shape it's in. You really shouldn't hear any creaks or rattles with the top down... With top up, you'll get squeaks and rattles.
