Default Head gasket

How much will using a 3mm head gasket raise my compression by? Will it be enough to use toda b's.

I think you've got it backwards here. The Spoon gasket is "thinner" than stock and thus, will RAISE compression. You are putting in a much thicker gasket (actually, 3 times thicker). You will DECREASE compression.

A 3mm head gasket will LOWER your compression to around 9:1, not raise it.

Looking for a quick fix to raise compression on your S2000? Look no further, Spoon's thin headgasket for the S2000 is .45mm thinner than the stock headgasket which is .75mm. You can expect a slight raise in compression of about .3 which will add a bit more low-end torque. This gasket also has better sealing properties than factory and is also more durable.

Toda does not recommend using a thinner than stock headgasket with their cams if you are using stock pistons.
