I have access to pretty much every oil Motul makes at work, I'm about to do my 30K service, but don't know what oil to get for the tranny and diff, any ideas? I'm probably going to do the 300V 5W30 or 10W 30 for my engine.

300V don't offer 10W30.

As far as the diff, I use Gear 300 75W90.

Gear 300 is GL-5 rated, but supposedly safe for yellow metals (or so Motul claims), even though it contains sulfur based additives?

Unless you taking your car to the edge and back frequently 8100 will be fine. You can also do a mix of 300V and 8100 if you want a little extra protection. The difference with 300V is has a special shock package where if you are really pushing very hard and the oil film deteriorates the package will protect from metal to metal contact. We are talking about events such as dropping all your oil on the racetrack. So really 300V is the overkill of all overkill and anymore than a 40% mix with 8100 is, well overkill.

I use Gear 300 in my tranny and it's great. My car rarely sees a cold start under 70 ambient though and one of the issues with 300 is that tranny will feel pretty notchy the colder it gets. When it's real cold it can be harder to change gears. Once it warms up it feels great though. Much better than Honda MTF.

no question Gear 300 blows Honda MTF out of the water in terms of shear stability, but the GL-5 additive package makes me nervous because of potential long term synchro corrosion (although it may take years to become evident)...has Motul tested (and published) the corrosion of yellow metals when exposed to this oil? if not, they need to, or you are rolling the dice
The synchros are carbon not brass.

Carbon coated. (I thought the early trannies were not.) Motul is a fine brand, at least the equal of Amsoil, and used by many european race teams and several ALMS teams here.
