I was at our local fish market this week and I picked up some Smelts, they are kind of like smaller versions of fresh anchovies, a bit smaller in size and from fresh water sources. My parents used to fry smelts when I was a kid, so I want to re-live the experience as an adult, lol. I hope they turn out well.

Good Sushi grade Tuna sells for a boatload of money to high-end buyers. I love Tuna. I'd say my favourite fish is Halibut, Haddock, and Tuna.

Here's a smelt story. In college we went smelting where Gooseberry Falls flow into lake Superior. You net the melt standing in frigid waters wearing chest waders. You drink a lot. We caught lots & lots of smelt that day So many they wouldn't all fit in the cooler. We were driving a friends cherry red 1965 Mustang convertible. It was cold out in the 20'sF. We thought "Let's just put the rest in the trunk."
Do you know how hot the dual exhausts get on a 1965 289 Mustang? I don't think he ever got smell of half cooked smelt out of his new car.

My father took me smelt fishing , and our german shepherd dog came with us (he travelled everywhere we went). The river dumps into Lake Erie, not far from my present day home. My Dad was in the river with his waders and a long net. Every time his net was full he would dump them on the shore and then continue fishing. Our dog was having a feast on the fish being taken to shore and neither of us noticed it. At the end of the fishing duties there was much less fish that what we expected and our dog was pretty stuffed from eating, lol.

Neighbor used to come home with buckets of smelt and wanted to give us a bunch. Maybe we didn't cook them right but we never like them.

My grandmother had some swedish heritage. She used to like them pickled.

^ A friend of mine of Scandinavian descent told me about Lutefisk. I think that is definitely an acquired taste. I have never tried this and never will.

I am Italian, we always ate them fried, in like a simple tempura batter. The ones I get now have no heads or innards , and are easy to prepare. My wife's Portuguese family like fresh anchovies on the barbecue, so I'd like to try smelts that way if possible.
