People have done pretty much the whole car - I have the boot floor, spare wheel area and roof tray done as well, though most of that is because of the sub.
For your system, just the doors will be fine.

Cheers for that... Do you find a lot of benefit in reducing external road noises etc? I know with the convertible good it'll let a lot in though

People who have done the whole cabin (such as C7 JFW) report good things, but it's a lot of effort and no little expense. I'd stick to just the doors if I were you.

I spent about £1100 or so in total, but a lot of this was labour (£400 or so from memory) on fitting the speakers, amp and sub so you could save here. I already had my headunit.
Quick run down:
Alpine PDX-F4 amp
Audison AV K6 components
Sound deadening in the doors
I don't have a sub and it sounds fantastic. I can hear things in songs I can't on my home setup (Monitor Audio Floorstanders) so it's worth spending the money. I can listen to the music with the roof down at autobahn speeds. Sure, not cheap, but you get what you pay for.
I went with a 4 channel amp in case I felt I needed to add a sub. But to be honest, the Audison speakers are so good, and combined with decent sound proofing, there's no need.
