Engine sensor readings
Has anyone got/made a loom that connects the ECU to laptop with software to look at engine sensors? Just asking to see if it exists....
I'm mostly interested in AFR and oil temp (although I think a sensor needs to be added to see that)
Would be good for track days and "spirited" driving I thought

See my for sale thread, I have a obd2 Bluetooth that will do most of your required stuff.
You won't be able to view AFR as it's narrow band an neither oil temp I think, also if you want to view afr you'll need a wideband+sensor+gauge.

I doubt the O/P just wants narrowband AFR, I know you know this?
The AFR the S/ecu monitors via narrowband such a small range and pretty useless other than telling the ecu it's lean or rich/stoich.Narrowband it's pretty useless for logging due to it's limitations IIRC it's 0-1v and a small fluctuating scale, wideband is 0-5v and much more useful no wonder manufacturers are switching to WB.
I doubt the OP wants just narrowband.

I used to use narrowband quite effectively on all the Impreza's I had 
If you get an an accurate enough guage with mv increments (I used an autometer) it can be quite useful.

You are only looking at the same signal which the ECU sees to control it's fuelling, so if it's good enough for the ECU, then...
But logging AFR is pretty pointless unless you have a modified car. Using the car on track makes no difference at all - it's not like the AFR would get worse bacause you are driving the car hard.

scan guage plugs into OBD port and reads all engine sensors
water temp, Throtle position, ign adv, air temp etc, it also can give MPG and miles to empty data, what it wont do is log the data, there is one that can do this its a black box that sits between the obd port and laptop/PDA
i had one but cant remember what its called, try a search with obd data logger and s2000
personally i would go for Ivatrons and buy a cheap blue tooth dongle if its logging your after, if not go for a scan guage as its also a fault code reader
