17" track wheels
That's the setup I've been using for 2 1/2 years, around 20 track days. Works great!
Two points to be aware of:
1) the width stagger front to back is not ideal, it moves you more toward oversteer compared to the OEM tires. You may need to compensate with alignment and/or bar settings. My car has always pushed, so it hasn't been a problem for me.
2) the fronts will rub on extreme suspension travel with steering input. My plastic fender liners are tucked above the metal now, after the tires erased some of the fasteners. Consider either doing that or rolling the fenders, or both.

I got a lot out of my first set (maybe 15?), but some were pretty early track events for me (slow!) and some were rain days. I've done three (one of them rain) on the second set so far.
I got the second set shaved by Vilven to 6/32"; their normal shave depth is to 4/32", which leaves the shoulders pretty rounded off. The hardcore track people will tell you to shave to 4/32", but if you're an occasional recreational event person like me, I think you'll get more life out of them left deeper.

Doesn't look like that much of a diffenrence considereing these are 225 vs. 275
OEm 225 S-O2 are very wide compared to other 225er's
I'll vouch for the 225/45-17 255/40-17 configuration. I've been running them on Volk TE37's and love the balance. Have only had 4 track days on them so far but I don't feel a need to change sway bars. At worst, you may need to make a correction in steering to help compensate for lift.
