i want wheel spacer that will make my ap2 v1 rims flushed to the fenders..what size do you guys recommend?

You need 15mm on each side.

If I were to get spacers again for the stock wheels, I'd probably go with 25mm since I like it looking a bit aggressive.

Would you need to start running more camber at that point? I was thinking about spacing my stockers out a bit. I run a 225/255 tire combo, think there is any risk of rubbing with stock suspension while in hard turns if you spaced 15-25mm out?

If I ran 25mm right now, I would probably need to run more camber at my ride height. But if you're on stock suspension, I don't think you will rub at all. Depending on how much grip you have, I'd bet that you wouldn't rub. With 25mm on 255's I'm sure you still won't rub.

I would agree that the spacers would widen the track and improve handling. You would need to get longer lugs for the spacers. You need to get the same amount of turns on the lugs. You do not need to get an alignment when you get new wheels and or tires. The tires and wheels do not affect the alignment at all. The alignment will affect wear on your tires though.
