NOt everything just the particular songs that yeah I had gone thru and deleted.. I docked it and then thought it updated the pod but for some reason they are still on it

Cracker this is not a recommended practice at all.

First: you will have no back up except your CDs Any loss of your iPod drive or accidental deletion (as described above) will leave you without those songs.
Second: you cannot get the music off the iPod without a third party application (kluge).

Personally I'd recommend against this strongly.

i do have just 1 more question if i am "manually managing" my songs how can i listen to all the songs on my ipod through itunes without having to "sync" the songs in? or is there a way?

Select the iPod from the left pane, then select either a song or a playlist that is on the iPod and press the big > button in the upper left.

wierd, i hit play and it just starts from the beginning. since i don't have my music arranged in playlists yet i'll have to get that organized before i have some fun, i'm guessing
