Dash control mods?
I searched out several threads about converting the dash controls to work with a remote.
Has someone worked out a way to simply rewire the dash controls so that the CH button cycles thru the modes, and the MODE PUSH knob twists clockwise and counterclockwise to go up and down the channels?

well, given that you are going to spend 100-200 dollars to upgrade the remote, you would be well advised to replace the head unit in my opinion. The stock head unit is a bit underpowered, and lacks a few features IMO.
You could concievably dismantle the stock remote and replace the switches, but you'd need to figure out how to make the stock head unit accept more commands, which may be impossible. Even if it is possible, I'd bet paying someone else to do it would cost at least 200 bucks more than the existing remote conversions, since odds are they'll fry at least one of the remote units trying to do it.
Alternatively, you can pick up an alpine 7894 for 250-300 pretty easily, get mp3 playback, better sound quality, and a heck of a lot more power. Other decks can be found cheaper. So this means there isn't much a market for doing the stock deck conversion. Most people willing to modify their stereo's and controls are going to opt for an aftermarket deck...
