When I had my motor built, they broke it in on the dyno. They tuned it. I drove it 1200 miles not going over 4000rpm. I came back, they changed my oil, checked over the motor, and tuned it again.

The most important part is the rings seating. This process happens in a very short period of time. The first ~50 miles of the motors life will be crucial which is why you want it to be tuned to run properly. I believe the harder you break it in from the beginning, the stronger it will be. It definitely doesn't take 500-1000 miles. Put some brad pen break in oil for 100 miles max, drain, put fresh regular oil in and have fun. Don't overthink this.
