I'm 6'1'', 195lbs, 32 and I think I'm as big as is comfy in this car.
I don't know how anyone taller can not end up cramped.
I think that at 6' you should be fine.

I drove a friend's s2000 and it has me seriously considering buying one. I'm
about 6'4" at 208lbs. and wasn't uncomfortable but my left knee was between
the steering wheel and the door with my foot on the dead pedal. Would an
aftermarket seat rail to drop the stock seat be good enough to make some
more room? I don't mind looking at aftermarket seats but from what I've
read they may be too tight a fit.

6'3", 250lbs. here!

It helps to sit extremely upright, that way the knees aren't bent as much giving more steering wheel clearance.
