On a mountain or canyon road the road is usually narrow and a single lane even narrower. On a two way road a bike is more limited, because it is often impossible or unwise to take the tires right to the edge of the paved surface. In left turns, if the tires are on the stripes, the drivers head and upper body are out in the other lane facing oncoming traffic. On blind curves experienced riders usually won't do that. In right turns if the bikes tire runs to the very edge of the road there will be places where trees or the cliff itself will impact the riders helmet. Even inexperienced riders usually won't try that trick. The end result is that a bike really can't use all the road the way they use all of a race track, but to the car it makes no difference. The proximity of hazzards limit bikes on many mountain and canyon roads to the extent that even the best riders can't keep up with cars that can corner fairly well.
For "average" riders it means nothing when they're outrun by a car, because most riders don't have the courage to push their bikes to the limit. Those who can can often outrun an "average" driver no matter what the road looks like, but since it takes less courage to push a car to the edge than it does to do the same on a bike, it's not really that unusual for a car to run away from a bike in the twisties.

For what it's worth, a certain GSXR-1000 will do 1:55 to 2:10 around Texas World Speedway depending on the rider. The winner of the particular race I'm looking at was a YZF-R6 with times from 1:51 to 2:04. (It was an endurance race with multiple riders.) My personal best there is 2:02, so you can see how much a difference the rider makes!

Getting back on topic - I was hoping that the S2000 CR would have a more Elise-like enterior - stripped of most extraneous interior material, with the fram metal showing off nicely finished. My understanding is that the carpet and such don't weigh a whole lot, but it would have helped...
