s2k02,
By all means, while you are waiting, get a copy of Dan Carney's book "Honda S2000". You will be impressed by the amount of work that Honda has invested in the safety issues of this car. I feel sure that you won't be concerned with any safety issues after you read this book.
Besides, it will help you kill some time while you wait.

If you are not used to driving a convertible, it will always seem like there is more wind noise - rightfully so because there is less insulation and no solid roof. In the S2000, it's noisier also because there is less insulation elsewhere as well.
As for rollovers, there have been a few and the windshield header and roll hoops seem to have worked; as has the ones in the boxster. Of course, the laws of physics still apply and everything has a limit.

SilverSurfer:
It was the Honda dealer on Capitol Expressway in San Jose.
I went back a couple of days ago and they finally had a '02, Sebring Silver. I was dead set on the Silverstone with Red and Black interior and I have to say that the Sebring Silver disappoints me a bit (no offense to Sebring Silver owners). I find it's too washed out, it doesn't have the character that the Silverstone had. I wonder why they took Silverstone out. I really don't know which color I'm gonna get. Not the White. Not the red. Black seems hard to keep clean. I have to admit that since I saw the pics of suvh8r's S2K, Spa Yellow is a definite possibility. I've always liked yellow cars, but everybody around me seems to hate them. Hey, I just won't take them for a ride if I pick yellow.

"Thou shalt not VTEC until 600 miles!"
Yes they are loud cars -- very little insulation. Buy a Mercedes if you desire a quiet automobile.

May roof'ed cars are not necessarily safer - may of their A, B and C pillars are more easily collapsible. The main issue with a convertible that has strong enough A pillars and roll hoops is keeping limbs in the car.
All of this is assuming that EVERYONE IS WEARING THEIR SEATBELTS.
