I was told by the mechanic at the dealership that the engine would take longer to break in... about 25,000 miles he said.... because of the early switch to synthetic.

I'm not expecting anything different with the car between now and 25K miles.

car has plenty of power and I have not noticed any drop in performance.

I ran the car easy for the first 2,000 miles - no VTEC at all

I will answer question #2 first: Oil consumption is typically due to blow by. Blow by is oil that "blows by" the ring's. Blow by can occur on high milage engine's.
Question #1: Proper seating of the ring's could be dictated by break-in technique. If the car is not driven hard enough during the first several thousand mile's, the ring's may not become properly seated. The cross hatches wear off and the cylinder wall's become smooth, thus preventing further seating of the ring's.
Therefore, break-in procedure during the first few thousand mile's could very well dictate how well all the moving part's seat themselves including the ring's.
How well the ring's become seated in the early stage's of a motor's life could very well affect oil consumption
It is possible that the S2000 could incur blow by if the ring's do not get properly seated within a certain milage or time frame.

looks like my rings did not seat properly at all, because my oil consumption is THE WORSE...7 quarts in 10K miles.
I drove my S2K VERY HARD after 600 miles...dunno why this is happening.
Maybe its just because I use synthetic...I hear synthetic equals more oil consumption than dino.
