As above, get 3 bars ina couple of mins but as Mr Hendy says, I've had cars with oil temp gauges which take 2-3x as long to get oils up to temp as well!

Out of interest, what are the normal operating oil temps? I guess in the 90c's?

just never heard anything as loud as that when a car is cooling down

Check to see if one your wheels is hotter than the others. When my rear calliper seized the car made much louder cooling noises.
